I just listened to an interesting episode of the BBC's history of the world in 100 objects.
They were talking about the beginnings of agriculture. Once thought to have spread from the fertile crescent to the rest of the world but now believed to have started independently in several places at around the same time.
They were asking the question why were the first crops plants that couldn't be eaten without some sort of preparation. Grains such as wheat in Eurasia, rice in China, sorghum in Africa and starchy tubers in New Guinea.
The conclusion was that these particular plants gave us an advantage over other species of animals precisely because they needed to be prepared and cooked before they were digestible so we didn't need to compete with other animals for them as a food source. Our big brains enabling us to cook and prepare these otherwise indigestible plants was the advantage which made agriculture worthwhile.
In other words, even before potters, it was cooks who made agriculture viable and led to the beginnings of civilisation.
