How do you know how many beers you can safely drink if you can't trust the alcohol content printed on the label?
Indeed. Your astute observation brings another, related question to mind:
How did we not all drink ourselves to death before beer had labels?

So many mysteries.

Do you know for a fact that verifying the alcohol content is not part of their remit? If not the labelling authority then who does perform that task?
Brewer submits ingredient list and process, but not product.

You may find this of interest: http://freedombunker.com/2019/01/09/gov ... er-labels/
The other problem with the TTB is a First Amendment one. As Greg Beato pointed out in a 2008 feature for Reason, the TTB routinely denies certain labels for alcoholic beverages that would be considered perfectly fine to slap on any other product. "If you're a perfume manufacturer and you'd like to name your latest fragrance Opium, no government agent will stop you," he wrote. "The world's flagship soda is called Coke. A company called Chronic Candy has been selling lollipops flavored with cannabis flower essential oil for eight years."

But the TTB has used vague statues to justify blocking labels for beers that make references, usually, to drugs. In 2016, for example, a Minnesota-based brewery was told it could not sell a beer made with lavender extract, sunflower oil, and dates as "LSD Ale." The exact same product, though, is perfectly legal to be sold under the name "Lavender Sunflower Date Honey Ale," which is what Indeed Brewing Company ended up calling it. By any other name, right?
I don't care what people name their beer. Let the free market sort it out. It always does (well, whenever government gets out of the way.)

Everyone knows that breweries are the most notorious industry for trying to make money by ripping off and lying to their customers. Otherwise, they could never stay in business.

There's a reason that bartenders and microbrewers are ranked right at the bottom (several notches lower than used car salesmen, congresspersons, and TV lawyers) on the trustworthiness polls.

Well, you could have an independent profit-making regulatory body test the claims but I fail to see how that would be cheaper than a non-profit making government regulatory body.

...or you could just trust the brewery not to rip you off or put your driving licence at risk with their fraudulent claims.
Someone save us from the breweries. If they won't stop me from drunk driving then maybe the government will.
How do you know how many beers you can safely drink if you can't trust the alcohol content printed on the label?
Or do you have a zero blood alcohol limit for driving in the US?
Yes, Montez, we're enlightened over here.

Reliance on the product label data is an absolute defense in court to any intoxication charges.

Lol - you are making a wild assumption that people who go to micro-breweries do intense math to calculate how much beer they can drink, based on what they usually drink versus the alcohol content on a new beer.

I've never read the alcohol content on any beer served to me at a bar or restaurant. (Well, in Utah, you have to ask... "is your beer the nasty 3.2 stuff?")

How is a bureaucrat reading a form going to prevent an unscrupulous business person from watering down the beer? Do you really believe that micro-brewers set out to make an awesome beer, only to water it down for their customers? LOL.

How often do you have to send samples of your cooking to your government, to verify your so-called sweet potatoes aren't really just yams in disguise?

Not the point.
If you know that a pint and a half of 4% beer keeps you under the permitted blood alcohol level but the beer turns out to be 6% and you fail a blood test how pissed off would you be?

What percentage of bar goers do you figure do these calculations? I'm going to go with zero percent, but I may be off by a percentage point or two.

No one ever failed a blood alcohol test because they ate yams instead of sweet potatoes.
People do die from eating food labelled as nut free when it isn't though.
Food labelling regulations can save lives so claims need to be verified.
Not all regulations are just government make money schemes.
