I will be making some sausage out of her, but not a lot, some real bologna would be fantastic. Shootin for 150# each Steak, Roast, Burger, remainder will be misc. Stew meat, ribs, etc.

Most the big round steaks I'll cube, gotta have some chicken fried steaks. I'll cut the roasts a minimum of 3#, but try for a 5# because a roast really doesn't cook right smaller than that.

I did have a local mobile butcher do the slaughter. I'm not set up to lift and move an animal like that right now. But I will do all the butchering after she has aged.

@Monte

I have no idea what the laws are on that kind of thing here. Probably not much. Honestly never crossed my mind to talk to the government about the rights and wrongs of butchering my animal.

I tell yell, I fretted over the decision how I was going to slaughter the cow for about 6 months. The mobile butcher slaughter was only like $120...................... but I'm such a cheap bastard on stuff like that it was a quandary for me. I just hate, hate paying others for shit I'm perfectly capable of doing myself.

(b) by slaughtering in accordance with the ritual requirements of the Islamic and Jewish faith or any other religious faith that prescribes a method of slaughter whereby the animal suffers loss of consciousness by anemia of the brain caused by the simultaneous and instantaneous severance of the carotid arteries with a sharp instrument and handling in connection with such slaughtering.

Your link says that they have to be shocked or knocked senseless before slaughter.

The US statute that you just pasted, simply says to shoot them.
