Yes sir we did do 5 gallons by hand.

4 of us sat around a table, just talking. In the back of my head I'm thinking this could be 50, 100, 1000 years ago. Nothing changed, 4 family members sitting around a table pitting cherries.

Definitely want to do some syrup, thinking about 2 qts of that in half pints.

We do the same every fall with apples. It's very relaxing.

It is...

It's timeless. It's a great side benefit. Maybe it really encompasses why I promote self reliance.

Production in my one mature small tree and 2 saplings went from 1.5 gallons to 5 gallons.

After pitting we lost approx. 40% volume. Left us 12 quarts of processed cherries. They are pie cherries, so of course we made a couple pies.

Not sure what we will do with the rest.....suggestions?

Are there different special kinds of yeast? I'd expect that yeast will do what it needs to..

There are many different strains of yeast, because there are many different uses for yeast.
