Used to marinate pork-chops and poultry in italian dressing, often, before grilling, but at some point, got it in my head that vinegar in marinades contributed to the meat drying out too fast during cooking, so I stopped doing it.

Might just be some crap.

That makes sense. Should adjust my approach.

Got locked into some habits from working in restaurants as a a kid.

Good grilling is a different animal.
