I believe it's two fold and both about total global control. First, lots of land is owned by meat producing people and as long as there is a high demand for meat, its hard to get those people off the land. Secondly people who are meat eaters are more independent thinkers and less likely to be compliant.

I don't think there is any true evil conspiracy behind the meat thing. I think just some powerful PETA types found a convenient way to push their anti-meat agenda on the back of climate change, and the climate change enthusiasts are too eager to just hop on the bandwagon before putting any real thought into what is being said. So the powers that be that are trying to appeal to these kinds of people also hopped on board creating a feedback loop.
