I don't know what is up with him and the pigs. They are tearing up all the peoples' land that live in that area and are quite a costly nuisance. Some of the other neighbors just blast em when they see em too. Dunno. He did say that there are about 9 piglets still running around, so I may get one or two of those. That should be interesting.

Woot, I will have the weber fired up later this week. I'll probably dig out my cures and seasoning to at least get a buckboard bacon out of one of the shoulders. ;)

Bought me a skinning/ boning knife. I was literally packing my butchering go bag when Tom called to say that he is ready to shoot another pig. I asked him to hold off for a day or two. I talked the wife into getting a pig only chest freezer. I have watched hours and hours of youtubes on how to butcher a pig. I'm ready. I should have my 3rd opportunity, which is really my 1st now that I think I know what the fuck I am doing, to butcher a pig in the next few days. I picked up a folding plastic table to part it out into primals. I have my battery sawzall to section that fucker off in to two halves. Hacksaw to section out the the 3rds and for some baby back ribs. Let's fucking go!

I might even get a piglet which I will try to smoke whole.

HA! No. But I am in the market for one. That was the wife's first response, to which I said that I have been googling about for one. Shit, I am thinking about setting up a stall at the local farmer's market and selling sausages. We make killer food.

I'll have some pics and a story. I'm currently curing some ham(?) to make buckboard bacon. I'll be firing up the smoker on Thursday to do bacon and cook the ribs. I'm noodling out on where I can set up a cold smoker in the yard. Fun times!

But because we are getting another freezer, the wife has drawn a line in the sand that she wants a generator now. Things are happening over here! Threaten me with a good time. :)
