Is it because counterweight trebuchets don't work in zero-g?
There is g on Iapetus, it is 0.2 Earth gravity, so your model Trebuchets work better in space.

Someone comes into your office ; they have to dodge the marbles launched from your desk.
I bet I could juggle 9 balls in low g. So much more time before they come back down again.
I'm going to name your character Dr. Iain Montgommery-Ponthieu d'Alençon

Norman French ancestry, born and raised on Gibraltar ; still British in the future.

He prefers to be addressed as Dr. d'Alençon, but his staff all calls him "Monty" behind his back.

Huh? Have I ever said that my name is Ian or are you psychic?
For legal reasons, we are not threatening to destroy U.S. government property with our glorious medieval siege engine. But if we wanted to, we could. But we won’t. But we could.

Was an homage to Banks, You are the Culture character.

Dr. d'Alençon has a love interest

Dr. Ophelia Lasso de la Vega-Alba

Dr. Vega-Alba is a fiery Spaniard woman, Spain is fascist as is all of Europe, but she's a secret republican.

MI6 is courting Dr. d'Alençon to try to get her to defect, in the process, he falls in love with her.

I shall whisper
Nulli expugnabilis hosti
in her ear as I take her from behind...

The two doctors take leave on Venus. Space colonists don't like Earth, too much gravity.

The ITMP senior scientists have a conference on Cloud City Paris.

Doctor d'Alençon makes his move for MI6, King & Country, but he falls for her in the end, can't help himself.

Then the European Union Security Services decide to kill her rather than have her defect.

Dr.d'Alençon is on his own, MI6 can only advise him, he must save her, and himself, by strength & guile

Being scientists, they are not kids, so for graphic novel, I'll model Dr. Vega-Alba on Paula Echevarria

Age 42 : Older but Bolder.

Now of course, Dr. d'Alençon is based on Montegriffo, so in addition to being a scientist, he's a Chef

Out on Iapetus he has special items brought in, and he cooks for his Staff.

They call him Monty behind his back, but to his face they call him Chef.

On Venus however, he has all the feexins available at Cloud City Paris,

So on the big date, he cooks for Dr. Vega-Alba, Andalusian fare.

"They have an excellent wine list here" d'Alençon chatted as he uncorked the Rioja "I hope you've got an appetite, I've made rather a lot of food" d'Alençon glanced down the nape of her neck then to the curve of her breasts revealed just above the top button of her shirt.
"I'm not ready for supper yet, I need some exercise to work up an appetite first, Cocinero" Dr. Vega-Alba spoke in her Spanish lisp as she unbuttoned the next button down, and then the one after, d'Alençon looked up into her suddenly bedroom eyes, the cork released from the bottle with a pop . . .
