Fawns are born around June. They hold their spots til September.
Most hunting seasons don't start until September or October.
Typically if you see fawn hides it has nothing to do with hunting. First of all there is basically no meat on them.

Juniper berries with port and redcurrant jelly.
Serve with braised red cabbage, game chips and a tinge of regret.

Rosehip and crab apple jelly time at the farm.
Paul makes it every year and usually has just about enough to last till next year.
Process the wild crab apples and rosehips from the hedgerows into a pulp and simmer slowly with enough water to stop it sticking to the bottom of the pan. After an hour or so strain in a muslin bag overnight then add a pound of sugar for every pound of fruit and boil until there is no more steam. It comes out a beautiful clear red colour and if you get it right should be just soft enough to spread on bread. Sometimes it can be too solid and impossible to spread. Very tasty, unique flavour.

I needed to use up the last bit of fresh pineapple last night so I had a go at a Malaysian style fruit curry. Usually made with fish or shrimp but I'm not eating flesh yet so I made a veggie version..
I didn't look up a recipe since I am short of the correct spices.
I just made a stir fry type curry with spring onions, carrot, bell pepper, celery and leek. I used an Indian curry paste, ginger and garlic and made it fairly hot and added the pineapple, coconut milk and a tiny bit of sugar to finish it off.
Very nice would eat again.
I didn't go to the trouble of serving it in a bowl made out of a pineapple though...
