Batch numero uno was dumped yesterday. Nasty. No way I am going to like it no matter how long it ages.

Second batch went out of primary to fill the carboy I just emptied. It is the viking's blood mead. It tastes okay out of the primary. I think that one is going to be okay.

Remember when I said the first one wasn't fermenting right? I think I just got some wild yeast or something in there that made it really, really bad.

I started pear cider yesterday, and will probably start a pineapple-apple cider today.

My wee heavy is waiting to go from primary to bottling, but I am waiting on the freaking bottles. It's outgassing through the air lock, so I think it's going to be fine.

Will probably try to create some kind of honey ale next. Not sure if I am going to do it this month or just wait.

No, I am not sure how to describe it. I wonder if it was fusel alcohol?

I know I dumped a lot of yeast in there when it seemed like the thing stalled. That is my best guess for what happened.

The second batch went totally dry, but it doesn't taste terrible like that.

Most likely causes are
The Viability and Quality of Yeast
Temperature Of The Wort
Lack of Oxygen in the Wort
Stuck Fermentations Are Better Prevented Than Cured.
The best way to avoid stuck fermentations of any sort is to concentrate on yeast health and providing the best possible environment for yeast to reproduce and flourish.

In practical terms this means; making a yeast starter, ensuring yeast viability and ensuring the wort has adequate aeration, nutrition and is held at the correct temperature for the yeast strain. If something does go wrong for some reason it will be due to one of the above factors so try to give your yeast no reason to stop halfway through the job.

Yep. After only a few months of Alabama Boss reviewing IPAs, he's already turned partly into a homosexual and likes the icecream IPA beer, as well as the Danish fruity brand.




IPA might make you gay, fam.

I might stop by the local brewery on the way home later. If they have something like that I will check it out. If not, it's the English Porter or one of their IPAs. Depends on my mood.

Pretty sure they don't have ginger beer going on for a few months yet.

Although.. I could probably use some of this wee heavy ale I made to create butter beer..
