We are only accustomed to dealing with like twenty online personas at a time so when we only have about ten people some people have to be strawmanned in order to advance our same relative go nowhere nonsense positions. -TheReal_ND

“Starting with some of the cleanest water in the world, it was so polluted by the time it reached the airport that planes were forbidden to tank up here. When Asheville took over the system we put $40 million into repairs. We have the highest level of certification available, and the high quality of our water is why we have such a successful craft brew industry here. Meanwhile we have corrected a rate structure that was implemented decades ago to deliver nearly free water to industry, paid for by residents, so that industry is beginning to pay its fair share,” Bothwell added.

Ashville may be punching above it's weight, but there's over 7,000 breweries in the country! I'll bet the fact that it's an attractive place to live has as much to do with it. Yes, those damn Yankee hipsters again!

This is just an argument between modern and traditional.
It's the appliance of science to brewing.
There's no right or wrong.
If your brewery is situated in a poor water quality area due to population density then you would be pretty stupid not to clean it up and adjust the mineral content.
If you happen to have perfect water qualities for the character of beer you want then leave it well alone.
You can bet that areas with good local water are still testing it regularly and are prepared to adjust it if they have to though.
Modern scientific techniques were late to come to port production. Now, most port houses will manipulate the sugar content of the grape and things like temperature control to increase the quality and achieve the characteristics of each brand.
This manipulation has only been going on for about 20 years and the results are very good. More years are being declared vintage and they are drinkable earlier.
The best vintages peak in maturity between 30 - 40 years though so it's too early to say whether traditional or modern methods are best.

Some interesting thoughts. I plan to catch as many feral colonies as possible next spring. No sense paying $190 plus for a nuc if it's possible to get them for free. I have my doubts about the 50% success rate, though.
