Classic lurcher is a collie cross greyhound. Fast enough to catch hares. The guy I'm working with has one.
You have to crack the deer over the head a few times with a cosh but muntjac are only 18" tall at the shoulder so easy enough to carry home on foot.
Muntjac and Chinese water deer are classified as pests so you can hunt them all year round.

Had to google Muntjac. You have 2 invasive non-native deer? Huh. Guess it's not that much different than Nutria or other crap we have here. Even wild boar is invasive non-native here.

Yeah, getting rid of feedlot cattle would raise the price and reduce the consumption. Since we only eat kosher meat at home that keeps our beef consumption down, Burger meat starts at $5/lb, brisket is like $12! We could afford it, but it just seems stupid.

Not that easy to take care of unfortunately.
The muntjac and Chinese water deer are not herd animals. They are solitary and only come together to mate. They are also small enough to hide in long grass and undergrowth.
You have to put bait down and wait up a tree or a ladder. Can take days to make a single kill.
Cars kill more than hunters.
A fast lurcher is the best way to get them but hunting with packs of dogs is illegal so you can only use one.
