I forgot..

When you are done, drain the remaining broth into a container. In the pan you used to sear the meat, put on medium high temp. Add a few table spoons of butter. As it melts, stir in a little bit of flour. Slowly mix in the broth you set aside, stirring constantly so there is no clumps of flour anywhere. Let it come to a really low boil and continue stirring constantly until it reduces and becomes gravy. You can add corn starch to speed it up, but it's best to do that in the melted butter stage, since the corn starch likes to clump up otherwise.

Another option if you want to make a surplus of food for later is to take that broth and instead use it to to cook a cup of rice. You should have just about two cups left, which is perfect for a cup of rice. It tastes super good with the pot roast broth, though you probably do not want to mix it with the pot roast (potatoes and rice not great combo, LOL).

A Japanese Sushi Chef just paid $3.1 Million for a 600 pound Bluefin Tuna. That's over $5,000 per pound. It can't be that damn good. What's up with this ?

It's not worth it, the real price is around $800 a kilo. It's a publicity stunt which happens every year to publicise the restaurant chain of the highest bidder in the New Year tuna auction.
Won't go on for much longer as bluefin are almost extinct now and have been below the population levels needed to recover for years.
It's a disgusting circus show profiting off the last few fish left of the species.

Yeah, likely true. I'm doing some reading on them, sounds like with decent feed they get to about 500lbs by age 15, they think they can live to about 50 years.

Amazingly, Bluefin wasn't really used by the Japs until 60s or 70s.
