Often made with the addition of whisky or vodka in fine dining restaurants over here.

Not at all. Gravlax is made with fresh raw salmon. Lutefisk is hard dried stockfish soaked in a lye solution. The salmon is usually frozen and thawed to kill any parasites just like when you make sushi. Then it is rubbed with a mix of salt, sugar and dill. Usually some vodka is added as well. Then you put cover it in plastic and put it in the fridge for a couple of days. It is more like carpaccio.

Or you can use some of your cheap whiskey instead of the vodka. Better than drinking it.
