It’s not arbitrary, it’s how we establish consciousness in anything, including ourselves, you’re using the same standard of analogous evidence to talk about the plant being “put to sleep.” It’s just there’s not anywhere near as much of that analogous evidence in the case of plants as the case for animals. A brain dead comatose patient’s body on life support may display similar chemical and. hormonal activity as the plant, you wouldn’t call that body “conscious” necessarily.

But if it was discovered that plants are sentient through other means than a brain, it would create many ethical dilemmas. I personally hope that never happens for obvious reasons

The phrase "worse than" implies both a moral judgment and one of disapproval of humanity itself. I think the vegan is projecting his own problems onto normal people who eat a proper diet.
I do not place moral judgments upon animals outside of perhaps jokes, and I certainly do not hold contempt and implicit hate for our species. In fact, I am rather proud of us atomic primates.
But JD has shown exactly that for humanity. Indeed, most of his type constantly express hatred towards our species. They co-opted environmentalism from nationalists to use it as a vehicle to demand population reductions through evil and tyrannical laws. They demand we not be allowed to eat a natural human diet. Think about that. If a zoo decided to feed lions what the elephants eat, the state would protect the animals from what would rightly be called abuse. Even JD's type would protest the abuse, and yet they want to do exactly that to humans. He is projecting.
