I'm thinking I'm going to do some hole canned plums, then the bulk of it will be a jam base, with variations. I want to make a few jars of savory jams to use as glazes on pork and chicken.

Might just have to try pickled plums

Now that sounds good.
Not set up for it. But I will have a small distillery in the future.

I think first thing I'm doing with them is making a BBQ Sauce on the stove tomorrow. Just got some tomatoes out of the garden too and we killed a jar of my standard sauce in the last week eating the Fred Flintstone Ribs from the Beef I butchered in the Spring.

These are small yellow Asian plums, Shiro I think they are named.

My FIL distils a lot. His rig is not even that fancy. He just uses kegs with the tops cut off that have a large inverted funnel with a tube hanging off.

Regarding the mash, he has those large blue barrels and fills them with corn or rice and water and tosses in these brewers yeast balls. I could find out amounts and proportions if asked. Anyway, the stuff could peel paint.
