I butchered my beef after 13 days aging. I usually age 17 days, but my scheduled worked out this way.
960# Live Weight, 577# Hanging Weight, 30# Offal, 14 Month old Black Angus Heifer. Grass Fed, plus some oats.

Doc, after we cut up the first front quarter we cut steaks off the neck, grilled em and the shit was delicious and really not that tough. Had a tenderloin last night when it was done and no knife was needed.
