After trimming and skinning. 50# of Bacon and #60 of Ham currently curing.
I'm going to be in the field next week so it was pretty critical that I get this stuff in the fridge curing. I am going to try a Proscuiotto. But for the time being all the ham is in a tube with dark brown sugar, salt, tender quick and spices. My Proscuiotto pieces I will take out next week, rinse thoroughly, maybe even soak in water. Then drain and dry and start my dry cure for it. That piece is about #12 pounds. Hopefully I can successfully do it and have it ready for the holidays.

No, but I got it from a local crazy Anabaptist collective farm. It's actually from half a hog, an older sow I think. I also got about 100# of sausage out of her.

Gave the chicks their first grown up feed today. They took off running through the yard and garden like they've never done before. Gettin' too big for their britches.

So we just had a week long rain/no sun. My jalapeno plant is quite unhappy and doesn't look like it will survive. The herbs & tomatoes are having a blast, though, so not a bad week, overall.
