Really? I found nothing compelling about the Dornish people. They are all kind of dumb. No political savvy whatsoever, foolish & short-sighted. Personally, I know enough.
I would want to know more maybe in a spinoff but in the main series it just seems to fulfill the role of all the required geographical locations like Planets in Star Wars.

They are politically ignorant on the show and they are ignorant externally, remember the kingdom of Dorne is and was unconquered and never bent the knee to Aegon so the politics of Westoros was never a concern for them, internally however the palace intrigue of a royal family like that would be interesting.
