A sticky BBQ sauce works with both chicken or pork so I don't see why it wouldn't be nice.
A classic cassoulet would also work with that combination. Substitute the chicken for the duck.

So the chicken/ribs experiment was a success. I left the chicken in a bit too long, but with sauce, it was delicious.
The ribs were for dinner on Friday, camp site set up day. Nerd left the tent poles at home, so we had to go to Walmart (ewwwwwwww,) to get a new tent, so the ribs didn't even get put on the fire to get warmed up until after 10:00. By then we were so tired and hungry, they probably would have tasted good no matter what.
We had leftovers, and confirmed on Saturday that they were delicious and very moist/juicy, falling of the bone, style.
It was just a little chicken stock with a bit of white wine and bbq sauce, and some spices. I often just grab spices to see what works, so it was salt, lemon pepper, oregano, basil, cumin, garlic and probably a couple I'm forgetting.

I was definitely, visibly and decidedly unhappy. Who wants to be at Walmart buying a second tent when the other 12 people are drinking beer, watching the fire? Fuck....
Side note - everything I was in charge of made the trip, but I would much rather have forgotten the mustard, given the choice.
