Been busy over the Winter and Spring.

I was given the family cabbage slicer. Which my my Mom and Aunts hold dear. It was in pretty rough shape.

Took it all apart. Repaired the wood, replaced the old rusted screws with new brass screws, sharpened the knives.

Then made a batch of Sauer Kraut in March, 35 pounds of cabbage, used the giant 20 gallon Red Wing Crock. Kraut should be ready in June.

I was happily surprised that the slicer was made out of Cherry wood. I treated it with Mineral oil, then a 50-50 mix of mineral oil and bees wax.

Traditional poor people food.

Cabbage is like Zucchini, anyone can grow it. It grows fast and in cooler weather.

I had a hard time finding traditional methods for making sauerkraut. Found one reference in an old ethnic cook book my mom had. The traditional method, as expected was pretty quick actually. We did 35 lbs in about a half hour.

Beans are filler. Totally worthless without the right spices and consistency. But for filler, they put rice and wheat in the grave.

Nah, just ahead of the game.

If you have a freezer full of steak you raised, why eat beans.

One of the funny little things out of the Bat Aids panic was folks flocking to prepper sites and seeing everyone was buying rice and beans. So, that's what they bought. Soon there were stories of people not knowing how to cook one or both, and other stories about folks getting tired of eating them.

If people ask me what to stock up on. I say whatever you normally eat. In a crisis, the last thing you want is to have to learn or get used to new foods. If you eat Ramen or Kraft Mac N Cheese fine. Load up on it.

If you have a freezer full of steak you raised, but you are not making use of beans, you are completely failing to leverage a unique advantage.

That is a big-city pro-tip for free. ;)
