In America, boar hunters tend to use either American bulldogs or Dogo Argentino.

I would definitely not want to hunt with anything smaller and less tough than one of those breeds.

Put away Monster Manual. It's not some kind of arena fight. The dogs are for tracking and driving, not fighting and killing. This guy uses Norwegian Elkhound or Gråhund as we call them. This is what battue look like.

American hunters use the dogs to catch the hogs, not to kill them.

Dogs catch the boar. Hunter kills the boar.

Same as people did in the medieval period (see medieval illustration above) except they use a rifle instead of a spear.

That is exactly how the dogs I listed are used and have been used for hundreds of years. Look at the video. You don't need big muscular dogs for that.
