Is that all a trebuchet can do? 100 kilos to 300 metres? Jeez, when you put it like that, it's pretty underwhelming, a 68 pounder cannon could fire a 30 kg shot a 500 m per second to 3000 m; trebuchet schmebuchet.

Ah but can you make your own with nothing but some wood, a saw, a hammer and a few nails?
Plus even in the US you can't just go firing off canon when ever you want to.

Muzzle loading cannons are not deemed firearms in the USA, and so are not prohibited under the 1934 NFA; only applies to breech loading.

You can fire off a 68 pounder muzzle loader in the USA, anywhere you could a trebuchet, no problemo.

Edit; no need to build one, I found a full scale muzzle loading cannon, online for sale at Dixie Gun Works, for $3995.00

Noisy bloody things though, bet your dog wouldn't like it, a ball throwing trebuchet on the other hand......

My dogs ain't gun shy, I get them used to the 12 gauge as puppies, American Field Labrador Retriever's; ultimate bird dogs.
