How long is your stay? There are so many different ways to see Florida.
If you aren't all that interested in theme parks and want to see Legoland, that's probably enough for you. Disney & Universal each have their charms, but you can't see either in a day. You need at least two days for Universal and I wouldn't recommend Disney in less than three days. There is simply too much to see & do.
The state parks in Florida are very cool. The scenery is spectacular and some of them have tours that will take you via safari like truck to see the local flora & fauna. Lots of hiking trails and such, too, along with canoeing or kayaking. Don't ever swim where it says "swim at your own risk," because it means gators.
For nightlife, Ybor city is pretty close. Someone mentioned Tarpon Springs - very worth the trip from where you'll be. The Greek food is amazing and it's cool to see how the sea sponges get harvested.
There's a county Park near where you'll be, called Fort Desoto. It's a great place to visit. It's an actual fort, used during The Civil War. You can tour the fort. The beach is spectacular, there.
It's fun to take an air boat ride through The Everglades. The boat can ride in just a few inches of water. Bring earplugs; it's very noisy.
Going to Key West is fun, but that would be a haul.
If you give me more of an idea on your interests, I can provide more thoughts.
