We have to eat a shit ton of broccoli sprouts for a decent chance of avoiding cancer and heart disease.

Please define shit ton. We eat broccoli 3-4 times a week and switch out green beans and asparagus.

She is saying that, in order to get the clinical doses of those chemicals from broccoli sprouts (the vegetables with the highest concentrations), you need to eat about 140g per day.

I did a little searching, and the studies she talks about used tablet form of those chemicals.

Something like this might do the trick without having to eat half a mason jar of broccoli sprouts:

I still think we need to drastically increase our vegetable and fruit intake, personally. We eat far too much grains and junk in place of what is supposed to be fruit, vegetables, and nuts. Cruciferous vegetables, for me, are the biggest problem because I don't enjoy many of them. I do eat quite a lot of spinach, arugula, and kale, however.

On the info section of the video (on YouTube), she has bookmarks to every subject in the video, so you don't really have to watch the whole thing. She discusses this under the "dosing" section. Just click the link and you are that part of the video.
