The calmest trip, by far, and the one where I got to really enjoy the city the most, was the fraternity convention.
The biggest meat market orgy, by a country mile, was the 1988 GOP convention. OMG there was pussy and booze overload. (I've written here or somewhere about my one dalliance with either national political party or their candidates, which centered around my later undergraduate years and that convention.)

I've got some stories for nuke's podcast about some of those football trips. Fights, talking shit with cops and their horses, ERs, double eye-patches, "we're sorry he didn't make it," that kind of shit.
I imagine Mardi Gras might be a bit too much of amateur hour / open mike night. For those kinds of bead-tiddy-fests, just go to the campground at Talladega the Friday and/or Saturday nights before raceday. No cops or gang-bangers there.
