I've eaten my share of veal parm sandwiches at various Italian restaurants, but never had it jellied. I'm sure it tastes good, because its veal, but what is the purpose of jellying it? Is it for preservation? I just looked up gravlax, and I'm down to try it. I love lox, and I buy salmon whenever it is on sale. Smoked salmon is the shit too.

My aunt got a ham sent down to her from Virginia one year. I don't know all the details of how it was made, but they used a shitload of brown sugar to cure it I think. It was the sweetest, softest ham I've ever had, and it cut well too.

Just ate a little package of gravlax this afternoon. It’s pricey, but holy crap it’s delicious.
