Well they won't be doing it for much longer.
For legal reasons, we are not threatening to destroy U.S. government property with our glorious medieval siege engine. But if we wanted to, we could. But we won’t. But we could.

A fucking rifle is way more humane.

Sure, it's fuckin brutal. You can almost see legionaries with pilums taking on that elephant.
But there is an argument to made here that what these tribesman are doing is a natural act. They've done it that way for over 10,000 years. Who are we to say they are wrong.

I went to college with a whole bunch of professors and students who praised the hunter - gatherer societies. Well, this is it in its most primal form.

I thought that too but there seem to be a lot of people who think animals are only useful as trophies to shoot and hang on walls.
There's no moral conflicts about hunting these things if science brings them back, none whatsoever. These things would be nothing more than glorified Dolly the Sheep. They would be less natural than Dolly. The moral conflict is should man be tinkering with the genetic codes. What if they bring back a transmittable disease that kills all the pachyderms in the world.

All things considered, I'd vote for the Mammoth in 2020.

A slug from a rifled ten gauge should do the trick. Can you imagine the backstraps on those things? A single prime rib cut would tilt a smart car like the Flinstone's mobile. You could carpet a nice living room with its hide, and mount the head above the mantle--there's a conversation piece--but you would need significantly additional freezer space for the mammoth chopped meat, sausage, and roasts...
What to do with excessive mammoth meat? I hope I have that problem someday soon.

It's not a legit kill unless you do it with an atlatl.

Fine, someone's got to be stomped in the ground; you can be one of the guys with the atlatls--I'll just hang with your sister and my finely crafted handaxe until it's carving time.

My sister would probably want to be one of the guys with the atlatls.. My little brother on the other hand would be right there with you keeping the hearth warm.

They wouldn't really be Mammoths, I don't think. No history. No knowledge. No wild herds. Just some experiments contained in a pen. It's not like they would set these things loose in the wild to wander into a town.

It would just be a sad Frankenstein with no real niche in the world.
