Because it actually costs about $40 to produce 5 grams of a plant that grows explosively in the outdoors with zero human tending whatsoever. None of that price reflects heavy handed taxation by WA state.

Chocolate edibles with 10mg of THC apiece are $2 to $3.
3.5grams of bud goes for $30 to $60 based on THC content or manufacturer.

We currently pay $100 for 7 grams. Quality stuff

The liquid THC to vape are $60 each cartridge. Totally worth it - love that stuff.

Pre-legalization in WA I had contacts that could get me an half-O for $100.

Even so, I prefer legalization.
